Hospitality Management as an industry balances the operational and functional areas of food and beverage management, lodgings management, and food science as well as business and management studies. You will also develop skills in the areas of communication, information technology, numeracy and team building.
In addition there is also the opportunity to study abroad in Canada, Finland, France and Spain. Teaching is primarily in English and all EU exchanges are eligible to receive Erasmus grants.
In year 2 you will gain professional work experience. This is further underpinned by relevant theoretical considerations relating to the hospitality industry.

Food and Beverage Management
Allows you to compare the major nutritional disorders of the developing and developed world. You will discuss the relevance of the links between nutrition and health to the hospitality and food industry, and identify and evaluate stakeholder needs and expectations of food and beverage outlets in relation to legal, economic, social, and technological factors. You will be able to apply functional and operational management concepts in the evaluation of a food and beverage outlet.

Principles of Marketing
The module introduces you to the principles of marketing in a business and management context, focusing on the role of marketing within the organisation and its interaction with other business functions. The module also helps you to develop practical marketing abilities.

Project Management
Project Management is widely recognised as one of the most enduring and generic skills in business. You will develop an understanding of effective project management techniques, methods and tools; and a broad range of issues and techniques relating to project management. These include planning, scheduling and resourcing, estimation, risk analysis, budgeting and contracts, tracking and change management, quality, communications, team working and project leadership, use of methods and their relationship to life cycles and project review.

You will gain a theoretical and practical introduction to accounting that covers the fundamentals of accounting methods including the production of financial statements for decision takers within and without various types of organisations.

Facilities Management
You will develop an awareness of the operational planning management practices employed to satisfy customer needs in a hospitality and leisure environment. You will investigate and assess the management and control of hospitality operating, distribution and marketing systems, and discuss and understand the interaction of essential inputs to sub-systems, outputs and feedback loops common to hospitality operations. You will be able to transfer operational management principles to leisure and hospitality practice.

Contemporary Food Issues
Enables you to evaluate the need for novel foods, and assess their benefits in relation to potential risks to health and to the environment. You will be able to provide informed advice to food manufacturers and consumers on issues relating to novel foods, food-borne infections and food allergies, and speculate on possible future trends in food production and food safety.

Service Systems Management
You will evaluate the economic, social and technological developments which have resulted in the importance of the service sector; evaluate critically the philosophical debate relating to the differences between manufacturing and service operations; apply and evaluate a variety of forecasting and planning techniques to service delivery systems, and analyse the operational requirements involved in successful service operations management.

In this module you will develop an understanding of the structure of the international hospitality industry, examine the diverse nature of international hospitality management and explore the wider issues of globalisation within a multicultural environment. You will examine the processes and practices of internationalisation in hospitality management and identify the positive and negative implications of globalisation in hospitality management. You will also define ethical and social corporate responsibility concepts in the global environment.

Rural Tourism: Innovative Products and Marketing
This course runs in one of four European university partner institutions on a yearly cycle, and is funded by the European Union. The aims of the module are to investigate and appraise real life problems of SMEs who work in the field of rural tourism and to evaluate the additional value given by rural tourism to the regional economy. You will learn to appraise the important role of entrepreneurship in the development of rural tourism in the majority of the European regions and investigate how tourism plays an important role in the preservation and enhancement of cultural and natural heritage. You will develop strategies to maximise the benefits of rural tourism.

This course runs in one of three European University partner institutions on a yearly cycle, and is funded by the European Union. The aims of the module are to provide you with the opportunity to focus on the practical application of theory to the analysis of European tourism destinations/attractions/transport systems. You will engage in cross cultural debates on the merits of international destinations and explore the implications of differing cultures. You will gain the experience of learning in a European partner institution, exchange knowledge and become a more effective participant in shared learning environment.
